Hi, my name is Brigitte. Thank you for visiting Brigitte's Bakery. In May 2004, I began a long journey - a journey that started with many health challenges, and has culminated into a life dream to have my own bake shop. It all started when I became very ill. I could not keep food down, was always very tired, and began to lose a lot of weight. My doctor ordered one medical test after another - none of which found any answers for the continued weight loss or the lack of energy. All I was eating was Jell-O and crackers - who knew crackers were making my condition worse? Eventually, I found a specialist that diagnosed my problem - Celiac Disease. What a relief to know that my condition had a name. What fear to know that my condition had no cure. I learned very quickly that I had to change my eating habits in order to maintain a healthy lifestyle. I started eating again - in a new and different way. I began to follow a very strict gluten free diet. It was certainly challenging at first, as I discovered new foods and new ways to cook. However, it quickly became my new lifestyle. I had always enjoyed eating out, but now that seemed to be a thing of the past for me. It was very difficult finding restaurants that offered gluten free selections. While traveling in Europe and British Columbia, I found it much easier to grab a gluten free meal or even a quick snack such as a homemade cookie or muffin. During my last visit to Victoria, British Columbia, I stumbled upon The Joint Pizzeria and Deli. Granted, I did not frequent pizza establishments very often, because none offered gluten free options. Yet there I was, indulging in delicious gluten free cookies AND pizza!! Every day while in Victoria, I stopped by for a cookie - a treat I just could not find that easily at home. After my visit, I decided to find a way to share that same joy with others in North Carolina that are gluten intolerant. I spent many years experimenting with recipes baking batch after batch of cookies, cupcakes, muffins and other healthy goodies. And with the support of my family and friends, I am very excited to share the fruits of my labor through Brigitte's Bakery - specializing in gluten free baked goods.
